- This golden-hued pasta is best matched by a delicate sauce that won't swamp the saffron's subtle flavour - try it with zucchini flowers, tomatos and basil
- this pasta has a delicate flavour with just hint of the sea.
making the pasta
- soak the saffron in 1 tablespoon wather and leave to infuse, when cool add to the eggs work this mixture into the flour and salt
- place the saffron and mix it
- mix the mixture, work this mixture into the flour and salt as described for basic pasta dough
