Instructions
pasta dough
- this pasta has a delicate flavour with just hint of the sea.
- Preheat the oven to 250 grader C
making the pasta
- place the pumpkin wedges in a bowl and mix it with just enough olive oil to coat them
- seson with salt and pepper
- Line a baking try with baking paper
- place the pumpkin wedges in a single layer on the try
- roast turning once, for 20 minutes or until golden and tender
- when the pumkin is cool, scrape the flesh from the skin, then puree in a blender and to the eggs, along with a pinch of salt
- mix the mixture, work this mixture into the flour and salt as described for basic pasta dough
